Quinoa, is a gluten-free seed, high in protein, and one of the few plant foods that contains enough of all nine essential amino acids. They also have a lot more fiber than most grains. Recommended use : Pour 2 cups of water into a wide pot and bring to a boil. Stir in 1 cup of pumpkin seeds, cover and bring to a boil again. Reduce the heat and simmer for about 15-20 minutes or until all the water is absorbed. When the Quinoa is properly prepared, you can see that small "tails" have sprouted from the seeds. Then you can use the Quinoa as a base for a breakfast bowl, for a salad or as an addition to a meal.
