I'm very fond of custard biscuits, cupcakes, muffins. If it contains cottage cheese, I will always try the recipe.
- Ingredients:
- 3 eggs
2 tbsp sugar
100 g flour - 80 g wholemeal flour
250 g cottage cheese
250 ml milk (cow's or vegetable)
1 tsp baking powder - 1 a.s. ground cinnamon
- 1/2 tsp. vanilla extract
80 g butter
Pinch of salt - Directions:
- 1. Melt the butter and leave to cool slightly.
- 2. Whisk the eggs.
- 3. Beat the cottage cheese with the sugar. Pour in the butter, milk and vanilla extract and mix well.
- 4. Add the eggs to the curd mixture.
- 5. Mix the flour with the baking powder, salt and cinnamon.
- 6. Add the flour mixture to the cottage cheese-egg mixture and knead into a dough.
7. Bake in a well heated waffle iron. - 8. Serve warm with jam, maple syrup or any other favourite topping.
- Notes:
- 1. These waffles can be made without eggs. Make half the recipe and use 2 tbsp. use half an egg and half an egg for the aquafaba (whisk it to a stiff froth and stir it carefully into the batter). Or 1 tbsp. 1 tbsp Spanish sage seeds in 3 tbsp. warm water and stir into the dough.
