Ajwain is an annual herb in the umbel family and is a close relative of cumin and dill. The ether of true cumin is thymol (like thyme), only in cumin-like (shorter) seeds. The taste is bitter and acrid, warming, intense, similar to cumin or caraway cumin, but very strong. Even a small amount of cumin can overshadow the aroma of the whole dish.

In the same family as parsley and cumin, it has a taste and aroma similar to thyme. It was widely used in India for baking bread and bakery products; the real holy grail bread is famous here - "ajwain ka paratha". It is also used to flavor snacks, it is very suitable for green beans and root-tuberous vegetables.
